Recipe - Tajine of chicken and vegitables
1. Cut chicken roughly into 8-10 cubes. Add the following seasonings to the meat and leave it to marinade for about 30 min.
* meat seasoning: a teaspoon of cumin, half a teaspoon of ginger powder (or grated ginger), a teaspoon of paprika, a clove of garlic finely chopped, a pinch of salt, pepper and chopped Italian parsley.
2. Put the chopped onion and seasoned meat into the Tajine and mix them.3. Pour olive oil onto this mixture and fry for 3-5 min.
4.Cut the carrot and potatoes as in the photos and place them side by side.
5. Place the sliced courgette, chopped tomato, Italian parsley and finally lemon on the top. Put the lid on the Tajine pan and simmer for 30 min.
6. Add paprika, saffron and salt and then simmer for futher 20 min. *:You can buy the special spice cube for Tajine (e.g. EDAIL ) in Morocco.
